EXOTIC ETHIOPIAN INSPIRED BLEND CHICKEN CURRY

INGREDIENTS:
1. 3 tbsp olive oil.
2. 1 onion chopped.
3. 2 cloves garlic minced.
4. 3 tsp Mola food Ethiopian spice blend.
5. 1 tsp of ground cinnamon.
6. 1 tsp paprika.
7. 1 tsp of turmeric powder.
8. 1 bay leaf.
9. grated ginger root.
10. Salt to taste.
11. 2 split breast cut into pieces.
12. 1 tbsp tomato sauce.
13. 1 cup plain yogurt.
14. 1/2 lemon juice.
15. 1/2 cayenne pepper.
16. Cilantro leaves.
DIRECTION:
1. Heat olive oil in the skillet over medium heat.
2. Saute onion until lightly browned.
3. Stir in garlic, Ethiopian spice blend, paprika, bay leaf, ginger, cinnamon, and salt.
4. Continue stirring for 2 minutes.
5. Add chicken pieces, tomato paste, yogurt. Bring to boil, reduce heat, and simmer for 20-25 minutes.
6. Remove bay leaf, stir in lemon juice and cayenne pepper.
7. Simmer 5 more minutes.
8. Lastly, garnish with cilantro leaves.
